Drop Everything Apple Crisp!

Today I went to the fruit market and got a bunch of good stuff. I also took a few really great pics, which I was going to share with you today. They featured really fresh looking produce, gorgeous buckets of flowers, and a couple of cool signs. Sorry. Those will have to wait.

I dropped everything to make what I have now dubbed "Drop Everything Apple Crisp"!

Kids need dinner? They can wait. Husband needs his USB stick delivered to the market in rush hour traffic? He can wait too. The question is: What would you drop for hot apple crisp?

The beauty of fruit crisp is that it's very easy to improvise. I like brown sugar, cinnamon and oats with butter. A bit of flour binds it all together. In a pinch I've made it with only white sugar and it was fine. Just use what you have sitting around and see how it turns out!

My recipe from tonight is pretty much the same as any other crisp recipe, but here's what I did:

Heat oven to 375

Get 7-8 Jonagold apples, peeled, cored and cut into 1" chunks. This is the hardest part.

Place them in an unbuttered 2 quart baking dish. A 9x13 would probably be OK too.

Mix together the following in a medium bowl:

2/3 cup brown sugar
1 cup oats
3 Tbsp sugar
1 tsp cinnamon
1/3 cup flour
1/2 cup (1 stick) of very cold butter*

*Cut the butter in to the mixture with a pastry blender or a fork if you don't have one. Push it around with your fork until it looks mixed but not creamed. I chop my butter in little pieces first. It's gratifying to chop butter with a really sharp knife.

And yes, I said 1 stick of butter. You can probably get away with 1/2 a stick, but maybe your kids haven't had dinner yet (see recipe title) and you want to add the extra calcium for their sake. Do it for the children!!

Now dump your topping over your apple pieces. Bake it for 30-45 minutes. I like mine pretty crunchy on top, so I always leave it in as long as I can stand to wait..

This MUST be served with vanilla ice cream, and best when still hot from the oven. Even better with walnuts on top if you have some. Once you've had a few bites, it will be much easier to pick up where you left off and continue on with your day. Enjoy!

Hours vary throughout the year, but right now I believe it's 6am - 7pm. The closing time gets later throughout the summer (open till 9 in July and August) and goes earlier once fall hits.

The apple crisp sounds delicious, and the picture really clinches it. I love the way you put the recipes together, you make it sound so easy & fun! A couple weeks ago we bought 2 peach trees. ( you need two to pollinate in order to get fruit ). Even in the nursery while picking out our trees we were planning our peach crisp.
