The Grapevine is published once a month, and I always get excited to see the new ones put out. You'll find an entertaining letter from Karin on the front, and some excellent seasonal recipes on the back. This month there's a Tequila Fruit Salad recipe that will be on my priority list. Leek Asparagus Quiche

You may already know about the little affair we've had with leeks, asparagus and quiche over the last month. The pinnacle came the night before Easter, when Dale and I created our own vegetarian quiche recipe. We ditched the healthier crustless quiche and went with the full flavor and mouth-wateringly delicious variety. A special occasion quiche for sure. Dale did the actual cooking (work). I (sat on the couch and) advised on the ingredients and proportions. This method of placing the asparagus on was fun; it was like a little asparagus treat on each slice.

Without further adieu:

Fresh Picked News -Leek Asparagus Quiche

Pie crust of your choice - store bought or homemade
Olive oil
2 Leeks, chopped
3 Shallots, chopped
½ Medium sweet onion, chopped
8-10 Spears of asparagus
5 Eggs, lightly beaten
½ lb Shredded Swiss cheese
½ cup cream

salt and pepper to taste

Preheat oven to 375 degrees

Prepare pie crust by placing in a 9” deep dish pie pan

In a medium skillet, sauté leeks, onion and shallots just until tender. Set aside.

Meanwhile, bring a pot of water to boil. Blanch the asparagus by dropping in and removing once the water returns to a boil. Rinse immediately in cold water to halt the cooking.

Combine all ingredients EXCEPT asparagus. Pour in to prepared pie crust.

Create asparagus spokes by trimming asparagus to approximately 4” in length, and lay on top to make a decorative wagon wheel design.

Bake for 30-45 minutes, checking for doneness after 30 minutes. Quiche should be set in the center. I think mine took more like 40-45 minutes.

My office enjoyed the March Grapevine so much that our team meeting luncheon veggies were from YFM. Here at LifeCenter NW Organ Donation Network and the Living Legacy Foundation would like to know the history of the footer on the back page. It means a lot to us to see people in the community recognizing the importance of Organ Donation and spreading the word.

Thanks for your comment! I checked with Karin on your question, and love her answer:

"For years, on the back page of the grapevine at the bottom of the page I always say "The Grapevine isprinted on recycled paper. Recycle yourself! Be an organ donor!" I change it up sometimes to keep it fresh, with other info about organ donation.

Organ donation is the ultimate personal choice in going "green," isn't it, and "green" is so valued herein Seattle-topia, and it's kind of a challenge I'm putting out there for readers. For Stuart and I as Christians, it seems to fulfil the mandate to do unto others, and it was a real comfort when my Mom died, to know that her spare parts were giving life, hope and sight to others after she was gone. "
