
Dinner!
I despise taco making. All the chopping and heating and pulling stuff out of the fridge. It seems so simple, but it's not. It's hard. Salsa, sour cream, guacamole, meat, cheese, cilantro, fresh tomatoes, lime, tortillas. So many things that have to be cleaned up afterwards. Some people think tacos are a fast weeknight food. Those people are delusional.
But there's this little invention called a crock pot. And it happens to make really great carnitas meat with pork shoulder that you get on sale for 99 cents a pound at the grocery store.
By the time dinner rolls around, the meat is done. Guacamole? 2 avocados mixed with some Charlie's pico de gallo and cilantro. 4 minutes. Cheese? Use Cotija - no shredding required, just crumble it. Cut a lime in half, drizzle it on the guacamole and the meat. Almost forgot the beans - a can of Goya Black Bean Soup microwaved for 3 minutes does the trick.
Load up your tortilla, and eat - while thinking about how you made an awesome meal that was sort of like tacos, but sort of not like tacos because it was a billion times easier after a long day of work than tacos would ever be.
The only pre-planning you have to do is the meat. (I put it in at 5pm the night before, and it was done and in the fridge by the time I left for work at 6am.)
